Mexican Surf and Turf Nacho Salad

Ingredients

¾ cup mayonnaise
squeeze of fresh lime juice
2 tsps. fresh wansuy (cilantro), chopped finely  
1 tsp ground cumin 
2 tsps. jalapeno, minced  
3 tsps. chili powder  
2 tbsp. extra virgin olive oil
2 tsps. ground pepper  
½ tsp salt  
200g CDO Regular Ham (Sweet), chopped  
200g medium shrimp, cooked and peeled  
½ cup kernel corn
½ cup small black olives, drained  
1 cup black beans, drained 
½ cup pepper-jack cheese, grated*   
½ cup jalapenos, sliced  
100g lettuce leaves, chopped  
 
Garnish: 
6 dollops sour cream
wansuy (cilantro) leaves, chopped  
tortilla chips   
 

Directions:

1. Combine in small bowl mayo dressing, lime juice, cilantro, cumin, jalapeno, chili powder, oil, pepper and salt. Mix well. 
2. To make Surf and Turf Salad:  Combine CDO Regular Ham, shrimp, corn, olives, beans, cheese, and jalapeno in large serving bowl. Mix ingredients together. Add mayonnaise mixture. Stir well again.  
3. To Serve: Spread lettuce leaves on plate. Top with Surf and Turf Salad on plate. Garnish with dollops of sour cream and chopped cilantro leaves. Serve with your favorite tortilla chips.    


 
 
*Substitute for pepper jack cheese: with cheddar or edam cheese.
